Ingredients
For the filling
- 15oz of 100% pure pumpkin
- 3/4-1 cup of brown sugar
- 2 tsp of vanilla blend
- 1 1/2 tsp of ground cinnamon
- 1/2 tsp of pumpkin pie spice
For the dough
- 2 1/4 cup of All purpose flour
- 1/4 cup of sugar
- 1 tbsp of baking powder
- 1/4 tsp of salt
- 8 tbsp of cold butter
- 1 cup of cold milk
For the egg wash
- 1 egg
- 1 tbsp of milk or water
- Turbinado sugar
Review
Although it was my first time making these empanadas, they were not too difficult to make, and the filling was delicious. I suggest having someone else accompany you when making these because they are time consuming. I ended up making 24 empanadas using the exact measurements provided in the recipe. Another thing to know is that they taste better when they are slightly warm, but not straight out of the oven unless you want to burn your tongue. Other than that they were delectable and I received many compliments from family and friends.
